Veggie rollups
I made these for one of my Christmas parties and they were a complete hit, so I thought I'd share:
Super easy to make, but impressive looking presentation - bought a bunch of different veggies (red onions, celery, carrots, turnips, raw spinach, red/orange/and yellow peppers, etc.) and some herbs - fresh basil and rosemary, ground pepper...julienne veggies so you end up with little strips no bigger than about 1/4 to 1/2 inch in diameter. I also used some garlic hummus and Mediterranean olive tapenade in some rolls.
For bread, I used sourdough from the bakery, already sliced. Cut off the crusts and roll individual slices out until all the air is out and you essentially have a flat baked dough. Spread whipped cream cheese (or herbed butter) over entire slice. Arrange veggie strips according to what tastes you think will go well together - alternate colors - fill bread slice about 2/3 full. For some, I added a layer of spinach over the cream cheese, then dabbed on some hummus and a few strips of veggies – you’re pretty much only limited by your imagination (and how long the bread slice is).
Then roll up carefully but tightly, then wrap in plastic wrap, tightening the roll as you go - like you would do to sushi. Refrigerate tightly wrapped rolls overnight. When you're ready, unwrap and slice into 1/2 inch slices and arrange festively! :>)
