Fresh Picked Corn From Sweet Annie’s Apple Orchard and Farm

Wow!! A very nice Zumba teacher at ABT's Studio in Tucson Arizona asked if I wanted some fresh vegetables. What she dropped off at my door included four freshly picked ears of sweet corn. Yummy!!! I used two ears immediately...;-)

 

Sweet Corn and Salad Recipe:

1. Take two ears of fresh corn 🌽 and husk them.

2. Slice off the corn kernels

3. Peel and dice one red onion.

4. Dice one handful of red and green Bell pepper sections.

5. Dice one large Jalapeño pepper.

6. Place everything into a medium bowl and mix.

7. Add the contents of a 14.5 ounce = 411 gram can of diced fire-roasted red tomatoes.

8. Add fresh herbs from the garden, such as basil leaves and flowers or nasturtium leaves and flowers.

9. Mix everything together.

10. Serve or keep cool in the refrigerator.

Note: It’s delicious as is. Or you can add some vinegar, such as cider vinegar or balsamic vinegar or plain white vinegar, to taste.
