This is one of my favorite pies to make and to eat. I've been craving one ever since a certain friend whispered sweet nothings about chess pie into my ear. Unfortunately, my game was off when I put this little beauty together. Somehow I managed to overwork the crust and then parbake it at a too-low temperature, resulting in a badly-shrunken crust. I forgot to dock it before parbaking it, resulting in the bottom crust souffleing up. As I put it in the oven, I managed to slosh a generous amount of custard underneath the crust. It would have been funny, if only it were happening to someone else.
In short, it won't win any beauty contests. Until we cut into it, that is.
