blackberry sourdough pancakes

2 cups whole wheat flour

1 cup sourdough culture

2 cups whole milk or buttermilk

1 tablespoon maple syrup

2 eggs

1/4 cup butter, melted

1/2 teaspoon salt

1 teaspoon baking soda

1/2 to 1 cup fresh or frozen blackberries

 

Combine the flour, sourdough and milk and let rest on counter for 8-12 hours or longer if desired. Whisk together the eggs and butter. Add all remaining ingredients to the flour mixture. Whisk until just combined. Serve with maple syrup, yogurt and fresh fruit.
